1 pound large dry lima beans
1 ham bone
1 small onion -- chopped
2 stalks celery -- chopped
1/4 teaspoon garlic powder
fresh ground pepper -- to taste
3/4 pound penne
Presoak beans, using either the overnight or quick soak methods specified on the package.
If using the quick soak, do not boil beans - it will loosen the skins.
Rinse beans and place in large pot over ham bone. Cover with water and other ingredients.
Simmer until beans are tender, about 1 1/2 to 2 hours, stirring occasionally.
Remove ham bone and remove any meat. Increase temperature (doesn't necessarily have to be
boiling) and add pasta. Cook until pasta reaches desired degree of tenderness. Reduce
temperature and add meat from ham. Leave in until warm. Serve.
